It just so happens that the best things in life were discovered by chance, as unexpected solutions. The most picturesque legend, among the many that tell the story of garganelli, concerns an ingenious cook who was employed by a famous cardinal. She wanted to prepare a traditional cappelletti dish, but when the time came to make the filling, she noticed that it had disappeared, probably stolen by a hungry little pet. The cook looked at the dough that was already cut into squares, and knew that the guests were anxiously waiting for a first course. She used the tools she had available, rolled the squares and invented a new shape that was destined - from that day on - to be a great success.
Our advice? The traditional ridged pattern makes garganelli perfect when paired with your favourite sauce. -
